Shredded Carrot Salad (Insalata di Carote)

Ingredients
5-6 medium carrots
1 teaspoon salt
1 tablespoon lemon juice
6 tablespoons olive oil
Instructions
Peel and wash carrots, then grate. When ready to serve, add; salt, oil, and juice. Toss well and serve at once.
