Shrimp Remoulade


1-1/2 pounds cooked, shelled and deveined shrimp
1 cup mayonnaise
1/2 cup seeded, chopped cucumber
2 tablespoons chopped parsley
2 tablespoons chopped chives
1 tablespoon horseradish
1/2 teaspoon dry mustard
2 teaspoons lemon juice
1/2 teaspoon salt


Chill the shrimp. Mix the remaining ingredients together and chill. Just before serving, mix the sauce with the shrimp and place on crisp lettuce.


Serves 4-5.
