Stuffed Pork Chops


8 pork chops, 1/2 inch thick
1 large onion, chopped
2 tablespoons olive oil
2 cups seasoned croutons
2 cups chopped apples
1/3 cup raisins
1/4 teaspoon pepper
1/4 teaspoon sage


Sear pork chops and set aside. Saute onion in olive oil, then stir in remaining stuffing ingredients and seasonings. Cook until warm. Place 4 pork chops into the bottom of an ovenproof casserole. Spoon stuffing over these and top with remaining chops. Bake uncovered at 350 degrees F for about 1 hour.


Makes 4 to 6 servings.
