Tara's Taco Casserole
This is an old family favorite from a high school friend of my wife’s. She’s descended from a Nicaraguan family. This is one of our favorites of all time, and it is requested by friends as well. For a long time we called it “Tara Stuff”.
Ingredients
Tortilla Chips (1 bag)
Cooked chicken breast (3-4 large)
Cream of Chicken Soup (1 can)
Cheddar Cheese Soup (1 can)
1 cup of sour cream
1/4 cup taco seasoning
Creamed Corn (1 can)
1 can of diced Green Chiles
2 cups grated Cheddar or Colby Jack Cheese
Instructions
Boil chicken breast and dice into ½” cubes.
Mix remaining ingredients (except tortilla chips and ½ of the cheese) in large bowl with chicken.
Lightly crush the tortilla chips in the bag
Spray or grease a 9x13 casserole dish.
Layer in the casserole dish: chips/chicken mixture/chips/chicken mixture and top with cheese
Bake at 350 deg. (about 20 min.) until cheese is melted and brown and casserole is heated through.

6-8 servings
