Tomato Spice Quick Bread


3 to 4 ripe tomatoes
2 large eggs
1/3 cup vegetable oil
1/2 cup sugar
1/2 cup brown sugar
1-1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1 teaspoon baking soda
1/2 teaspoon baking powder


Preheat the oven to 350°F. Grease an 8x4-inch loaf pan. Slice the tomatoes, then purée in a blender. Measure out 1-¼ cups. Mix the eggs, oil, sugars, and tomato purée in a mixing bowl. In another mixing bowl, combine the flour, spices, baking soda, and baking powder. Add the dry ingredients to the tomato mixture. Pour the batter into the prepared pan and bake for 40 to 45 minutes.


Makes 1 loaf.

Found this recipe last year, loved it then & enjoying again this year.. made it in small loafs for gift giving, Bundt pan & loafs... have added cranraisins, raisins, nuts, or just plain...all which were well can freeze prepared tomatoes for later use...great way for use of those extra tomatoes that you have.
