It is a family tradition. My Mom made it every holiday that we had turkey. I made it for my family. They are now making it for their families. I think it is the best way to use left over turkey. I have also used left over chicken as well. I like it because it is delicious, and every one I have made it for likes it very much. I have never seen it in any magazines or newspapers when they print up “Turkey left over recipes”
Make a roue Cut up cooked turkey bite size place turkey in roue and cook for about 5 minutes.
Let stand until mixture is cold.
Place bread crumbs in a plate Beat eggs well in another plate
Place a large table spoon of turkey mixture in bread crumbs. Pick up and form a oblong croquette. Dip this into the beaten eggs. Then place in bread crumbs again. Place on a platter to sit while making all of them.
When they are done heat up the oil in a deep pan. The oil should be about 4 or 5 inches deep.
Place two croquettes at a time in the hot oil. Let them cook until they are golden brown, turning them over every so often.
Drain on paper towels.
Serve with any vegetables you like. also serve with cranberry sauce.
