Vermont Maple Johnny Cake


1-1/2 cups yellow corn meal
3/4 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons melted butter
1 egg, beaten
1/2 cup pure maple syrup (Grade B recommended)
1/2 cup milk


Preheat oven to 400 degrees. Mix dry ingredients, set aside. Melt butter; add milk, syrup and egg. Mix with dry ingredients just to moisten. Bake in buttered 8-inch baking pan for 18-20 minutes. Serve with pure Vermont Maple Syrup or real butter.
