Warm Nectarine and Prosciutto Antipasto
Pairing the warm, sweet taste of nectarines with salty prosciutto makes a wonderful first course. It is even better when served with a glass of champagne.
If you can find them, try substituting fresh apricots.
Ingredients
4 ripe nectarines or 6 fresh apricots
4 tablespoons extra-virgin olive oil
12 slices prosciutto
fresh thyme sprigs, for garnish
Instructions
Position oven rack on top shelf and preheat broiler. Get out a baking sheet.
Cut nectarines into quarters (if using apricots, cut in half) and remove pits. Dip cut side of fruit in olive oil and place, cut side up, on baking sheet. Place fruit under broiler for 3 to 5 minutes.
While fruit is still warm, but not too hot to touch, plate nectarines and arrange prosciutto slices atop cut sides of fruit. Serve warm, garnished with thyme.
