Watermelon Salsa can be served as a tangy dip with tortilla chips or it’s fantastic alongside chicken or fish. Delicious and perfect for summer!
1/4 cup orange marmalade
1/4 cup chopped fresh cilantro
1/4 cup finely chopped jalapeno
2 tablespoons white vinegar
1 clove garlic, minced
1/2 teaspoon salt
2 cups chopped, seeded watermelon
1 cup chopped sweet onion
1 cup chopped oranges
In a bowl, stir together all ingredients. Chill for at least 30 minutes before serving.
Makes about 4 cups.
