Lose weight the low carb way.
Preheat the oven to 400° F. Coat 2 baking sheets with cooking spray. Thinly slice the zucchini diagonally, about ⅛ inch thick. Place the slices in a large bowl and toss well with the oil, salt and garlic powder (if using). Arrange in a single layer on the baking sheets. Bake, turning often, for 25 minutes. Reduce the oven temperature to 300° and bake until splotchy brown and crisp, 10 to 15 minutes. Remove to paper towels and let cool. These will keep at room temperature, uncovered, for several hours.
