Chocolate Waffles

Yield: Makes 6 to 8 servings.

  • 2 cups cake flour
  • 3 teaspoons baking powder
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1-1/4 cups milk
  • 1/3 cup butter, melted
  • 2 squares unsweetened chocolate, melted
  • 2 eggs, separated and beaten
  • whipped cream, for topping

Preheat waffle iron. Mix dry ingredients, then add wet items in the order listed, beating well after each, except for the beaten egg whites which should be gently folded in to the batter. Fill griddle 2/3 full and bake until steam stops emerging. Top with whipped cream.
