How were fresh eggs stored and used without refrigeration before electrification?
Answer
The water glass method was used to store eggs for many months. The eggs were washed and layered in a crock and covered with a water glass (sodium silicate) solution. The crock was covered and placed in a cool place. The crock had to be checked from time to time and more water added to replace water that had evaporated.
