You should be able to gather up the yolk by moistening a cloth in cold water and touching a corner of it to the yolk. The yolk should cling to the cloth like a magnet. You’ll have the best luck if you’re working with very cold ingredients. It is important to remove even the tiniest amount of yolk, since even a little can ruin a delicate recipe.
