With a sharp knife, cut an X on the flat side of each chestnut. Place in a single layer in a baking pan with sides and bake 30-45 minutes at 375 degrees, or until they pop open at the X and the skins are turning a little bit brown. Remove from pan to a towel-lined bowl. Cover with the towel and allow them to stand about 15 minutes before peeling. Both the outer and inner skin should peel off easily. Now, how would you do it over an open fire, as a the holiday song suggests? First remove the burs (rough, prickly seed cases) from the chestnuts. Prick the smooth inner shells with a fork - this will release steam buildup after heating. Put the nuts in long handled shallow frying pan that has ventilation holes in the bottom. Place the pan with the chestnuts on hot coals until the shells pop open.
