With a sharp knife, cut an X on the flat side of each chestnut. Remove from pan to a towel-lined bowl. Cover with the towel and allow them to stand about 15 minutes before peeling. Both the outer and inner skin should peel off easily. Prick the smooth inner shells with a fork - this will release steam buildup after heating. Put the nuts in long handled shallow frying pan that has ventilation holes in the bottom. Place the pan with the chestnuts on hot coals until the shells pop open.
