Cucumber-Mint Salad Dressing Recipe

"A refreshing warm-weather dressing which is best when made in a food processor. Serve it over chilled romaine and cherry tomatoes." --Longwood Inn, Marlboro, Vermont

Yield: Makes 4 cups

  • 2 medium cucumbers
  • 1/2 cup fresh mint leaves
  • 1 large clove garlic
  • Juice of half a lemon
  • 1/2 cup mayonnaise
  • 2 cups sour cream
  • 1/3 cup red-wine vinegar
  • Fresh black pepper

Peel cucumbers, slice in half lengthwise, and scoop out seeds with a spoon. In processor puree mint leaves, garlic, cucumber, and lemon juice till very fine. In large bowl mix this together with mayonnaise, sour cream, and vinegar. Add a few twists of black pepper.
