Kale is all the rage right now—and for good reason! Much like its well-loved cousin, spinach, kale is a healthy and versatile leafy green. Here are a few of our favorite kale recipes!

Kale Salad with Cranberries, Feta, and Walnuts

The General Store in Harrisville, New Hampshire, lures in locals and tourists alike with its made-from-scratch food, much of it locally sourced. Their take on kale salad is delicious and very popular. “The key is to slice the kale very thinly to distribute the flavor evenly,” advises store manager Laura Carden.

Kale Sausage and White Bean Soup 

Meat, legumes, and a leafy green—what more could you ask for in a soup? To add even more color and sweetness, substitute diced winter squash for the potato. Whether you use potato or squash, add cooked pasta at the end and you’ve got minestrone!

Kale Pesto

Try this delicious kale pesto, which works great as an appetizer with chips or as a dressing in a pasta.

Kale

I prefer it cooked like turnip greens with either a ham hock or salt meat.
Have eaten it like that all my life, it was a staple in our garden when I was a kid.
