Some of our favorite ways to use kale
Kale is added to recipes for good reason. Much like its well-loved cousin, spinach, kale is a very healthy leafy green. However, kale is best enjoyed when prepared correctly and when used in the right kinds of recipes. Here are some of our favorite recipes using kale.
Favorite Kale Recipes
This is our favorite kale salad! The nearby General Store in Harrisville, New Hampshire, lures in locals and tourists alike with its made-from-scratch food, much of it locally sourced. Their take on kale salad is delicious and very popular. “The key is to slice the kale very thinly to distribute the flavor evenly,” advises store manager Laura Carden.

Meat, legumes, and a leafy green—what more could you ask for in a soup? To add even more color and sweetness, substitute diced winter squash for the potato and double the herbs. Whether you use potato or squash, add cooked pasta at the end and you’ve got minestrone!

Try this delicious kale pesto, which works great as an appetizer with chips or as a dressing in a pasta.
