Salmonella bacteria are commonly found in poultry and can be absorbed by the stuffing. In fact, the combination of moist stuffing and uncooked turkey is an ideal environment for the bacteria. The stuffing can be prepared the day before and refrigerated, but don’t put it in the turkey until just before the bird goes in the oven. After cooking, all the stuffing should be removed from the cavity.
