Oatmeal-Chocolate Chip Cookies

These cookies are super easy to make and extremely delicious. They are great with semi-sweet chocolate chips, but we recommend trying them with milk chocolate chips for a truly mouth-watering treat.

Oatmeal-Chocolate Chip Cookies

1 cup (2 sticks) butter or margarine, at room temperature

½ cup sugar

½ cup brown sugar

1 teaspoon vanilla

1 large egg

2 cups all-purpose flour

½ teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

2 cups quick-cooking rolled oats

2 cups chocolate chips

½ cup chopped nuts (optional)

Preheat the oven to 400°F. Lightly grease your cookie sheets. In a large bowl and with an electric mixer, cream the butter and sugars until smooth. Add the vanilla and egg and mix to blend. In a separate bowl, combine the flour, salt, baking powder, and baking soda. Add to the butter mixture and stir to combine. Add the oats and mix to blend. Stir in the chocolate chips and nuts. Drop by spoonfuls onto cookie sheets and bake for 10 minutes, or until lightly browned.

Makes 4 dozen cookies.
