Beet Chips
Move over potato chips—beet chips have you, well, beat! These easy-to-make vegetable chips are as beautiful as they are nutritious.

Ingredients
4 beets, stems and greens removed, cut into very thin slices
1 tablespoon olive oil
1/2 teaspoon sea salt or seasoning of your choice
Instructions
Preheat oven to 350°F. Get out a large rimmed baking sheet.
Place beets in a bowl, then add olive oil and salt. Toss to combine.
Place beets in a single layer on baking sheet. Do not overlap slices; use multiple baking sheets if needed for space. Bake for 40 minutes to 1 hour, turning slices over about halfway through cooking time. Watch carefully to prevent burning, especially if some chips are thinner than others. Cool before eating.

Makes 4 servings.

How do these compare in carb counts to potato chips?!

I would guess that the carbs aren’t that different, however beets are way healthier. Some of their carbs are fiber. And beets are a superfood due to high nutritional content (magnesium, potassium, vitamins A, B6 and C, iron, folic acid, soluble fiber, antioxidants and protein).
