Recipe for Beet Chips


4 beets, stems and greens removed, cut into very thin slices
1 tablespoon olive oil
1/2 teaspoon sea salt or seasoning of your choice


Preheat oven to 400°F. Get out a large baking sheet.

Place beets in a bowl, then add olive oil and salt. Toss to combine.

Place beets in a single layer on baking sheet. Do not overlap slices; use multiple baking sheets if needed for space. Bake for 45 minutes to 1 hour, turning slices over about halfway through cooking time. Watch carefully to prevent burning, especially if some chips are thinner than others. Remove from oven when chips are crispy. Cool before eating.


Makes 4 servings.
