Recipe for Beet Chips


4 beets, stems and greens removed, cut into very thin slices
1 tablespoon olive oil
1/2 teaspoon sea salt or seasoning of your choice


Preheat oven to 350°F. Get out a large rimmed baking sheet.

Place beets in a bowl, then add olive oil and salt. Toss to combine.

Place beets in a single layer on baking sheet. Do not overlap slices; use multiple baking sheets if needed for space. Bake for 40 minutes to 1 hour, turning slices over about halfway through cooking time. Watch carefully to prevent burning, especially if some chips are thinner than others. Cool before eating.


Makes 4 servings.

Burnt beets

I followed this recipe to the letter and ended up with burnt beet chips after only 1/2 hour. Is the temperature wrong or the time perhaps? I’d really like to try to make these but obviously not with this recipe. Bummer.
