Move over potato chips–beet chips have you, well, beat! These easy-to-make vegetable chips are as beautiful as they are nutritious.
Preheat oven to 400°F. Get out a large baking sheet.
Place beets in a bowl, then add olive oil and salt. Toss to combine.
Place beets in a single layer on baking sheet. Do not overlap slices; use multiple baking sheets if needed for space. Bake for 45 minutes to 1 hour, turning slices over about halfway through cooking time. Watch carefully to prevent burning, especially if some chips are thinner than others. Remove from oven when chips are crispy. Cool before eating.
