Coconut Oatmeal Cookies

Add a twist to classic oatmeal cookies by introducing coconut. These Coconut Oatmeal Cookies loaded with chewy oats and sweet coconut are rich and filling and absolutely perfect for dunking in a cold glass of milk.
Ingredients
1 cup (2 sticks) butter, at room temperature
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose white flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups quick-cooking oats
1 cup unsweetened coconut
Instructions

Preheat the oven to 350 degrees F. Grease two baking sheets.

In a mixing bowl, cream together the butter and sugars. Add the eggs and vanilla and beat until creamy. Sift together the flour, baking powder, soda, and salt. Add to the creamed mixture and beat until smooth. Stir in the oats and coconut. Drop by the rounded teaspoonful onto the baking sheets.

Bake for 9 to 12 minutes. Remove to wire racks to cool completely.
