Lemon Oatmeal Sugar Cookies

Sam Jones/Quinn Brein

2-3/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup (2 sticks) butter, at room temperature
2 cups sugar
2 eggs
2 teaspoons grated lemon rind
3 tablespoons lemon juice
1 cup quick oats

Sift together flour, baking powder, and salt. In a large bowl, cream butter and sugar; add eggs, beating well. Beat in lemon rind and juice. Gradually add flour mixture, then stir in oats. Chill dough thoroughly (at least 2 hours). Roll level tablespoonfuls of dough into balls and place onto greased cookie sheets, allowing room for cookies to spread. Using a flat-bottomed glass or custard cup that has been greased and dipped into sugar, flatten each ball to a ¼-inch thickness (dip the glass into sugar each time). Bake at 375 degrees F until lightly browned around the edges, about 8 to 10 minutes. Cool on cookie sheet for 1 minute, then carefully move to a wire rack.

Love to see your recipes-rarely use them, I hate to 'download' stuff.... if you would make them easy to just print or have printable OR even concise within the site, I'm sure far more would get used....

Lemon oat sugar cookies

These simple cookies are delicious, and I will make them again.

I used ground up steel cut oats (essentially coarse oat flour) in place of the quick oats.

I also rolled the unchilled dough between sheets of plastic wrap and froze it for about an hour- then cut the cookies using a round cutter.

Lemon cookies

Do you grind up the oats? The photo of the cookies show a delicate cookie. If you're adding quick oats without grinding them to a powder, the cookies would be a lot lumpier. Still, I'll try it and try to post a pic of the result. :)
