Mom’s Christmas Caramel Corn is a holiday favorite, blending sweet, buttery caramel and salty peanuts with crunchy popcorn for a perfect treat. It’s lovingly made, with each bite offering a festive mix of nostalgia and warmth, making it an irresistible snack during the holiday season! Ingredients
8 cups popped popcorn
1 cup salted peanuts
3/4 cup brown sugar
1/3 cup butter
3 tablespoons corn syrup
1/4 teaspoon baking soda
1/4 teaspoon vanilla extract
Instructions
  1. Preheat oven to 275°F.
  2. Line a large, rimmed baking sheet with parchment paper and set aside. Grease a 13x9-inch baking dish.
  3. Pour popcorn and peanuts into prepared baking dish.
  4. In a saucepan over medium heat, combine brown sugar, butter, and corn syrup. Cook until mixture reaches 255°F on a candy thermometer. Remove from heat and stir in baking soda and vanilla.
  5. Pour caramel mixture over popcorn and peanuts. Stir gently to coat.
  6. Bake for 15 minutes, stir, then bake for 5 minutes more.
  7. Remove from oven and turn out onto prepared baking sheet. Cool completely, then break into clusters and store in a container with a tight lid.
