This ginger lemonade hits all the notes: sweet, tangy, and spicy! It is a refreshing pick-me-up in the hot summer weather and a delicious mocktail at the end of the day (add in some vodka if you prefer cocktails!). The ginger lemon syrup can be prepared ahead of time to have on hand.

Make this beverage truly special by using homegrown ginger and lemons!

Quick Tip! To nearly double the juice collected from a lemon, submerge it in hot water for 15 minutes before squeezing. Or, microwave the uncut fruit on high for 20 seconds, then roll it on the counter under the palm of your hand. Cut it in half and press it on a handheld wooden lemon reamer or a glass juicer.

Ingredients
1 piece (2 inches) fresh ginger, peeled
1⁄3 cup sugar
3⁄4 cup fresh lemon juice
1 1⁄4 cups sparkling water
Instructions
  1. Cut the ginger into four or five pieces and put them into a small saucepan with 1⁄2 cup of water. 
  2. Bring to a boil, remove from the heat, cover, and let steep for 30 minutes. Remove the cover and refrigerate the liquid until it is cold. 
  3. Put the sugar and the lemon juice into a pitcher and stir to blend. 
  4. Remove and discard the ginger pieces. Stir the ginger water into the sugar mixture. 
  5. Add the sparkling water, stir, and pour into ice-filled glasses.
