This Irish Soda Bread French Toast takes the classic brunch recipe to a whole new level. It is rich and decadent and a great way to start St. Patrick’s Day! Serve with fresh whipped cream, strawberry preserves, or maple syrup!

Ingredients
1 loaf Irish soda bread
6 eggs
2/3 cup light cream or half-and-half
1/4 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter, divided
clotted cream or whipped cream, for serving
fruit preserves or fresh fruit, for serving
Instructions

Cut soda bread into 1/2-inch slices, discarding ends.

In a large bowl, whisk together eggs, cream, sugar, vanilla, and salt. Dip each bread slice into egg mixture, saturating well.

In a skillet, melt 2 tablespoons butter over medium heat. Working in batches, cook slices for 4 minutes, or until golden brown. Flip and brown the other sides. Add more butter to the skillet as needed.

Serve warm with clotted cream or whipped cream and preserves or fresh fruit on the side.
