I never peel potatoes prior to boiling ! Boiling skinned potatoes results in the loss of nutrients: Vitamins B and C ! Also, you lose some of the taste ... you get a bland watered down version of your potatoes. Of course, some people have been doing this for years and years and never realize what they are losing.
