Cucumber-Mint Salad Dressing

2 medium cucumbers
1/2 cup fresh mint leaves
1 large clove garlic
Juice of half a lemon
1/2 cup mayonnaise
2 cups sour cream
1/3 cup red-wine vinegar
Fresh black pepper


Peel cucumbers, slice in half lengthwise, and scoop out seeds with a spoon. In processor puree mint leaves, garlic, cucumber, and lemon juice till very fine. In large bowl mix this together with mayonnaise, sour cream, and vinegar. Add a few twists of black pepper.


Makes 4 cups

Can you store this?

This sounds lovely, but I have a terrible time judging how much of a recipe my family will actually use. Will this keep in the fridge?
