Day-After Turkey Soup

Ingredients

2 tablespoons olive oil
1 to 2 onions, finely chopped
3 to 4 carrots, diced
3 to 4 stalks celery, diced
2 quarts turkey stock
2 cups noodles
1 red bell pepper, diced
1 cup peas, fresh or frozen
1 to 2 cups chopped leftover turkey
1/2 teaspoon dried thyme
salt and freshly ground black pepper, to taste
1/4 cup chopped parsley

Instructions

Heat the olive oil in a soup pot and cook the onions, carrots, and celery until soft. Add the stock and bring to a boil. Add the noodles and cook until just tender, about 6 minutes. Add bell peppers, peas, and turkey and simmer for about 5 minutes. Stir in the thyme, salt, and pepper. Add the parsley and serve.

Makes 8 to 10 servings.
