4 cups all-purpose flour
2-1/2 cups sugar
4 teaspoons baking soda
4 teaspoons cinnamon
pinch of salt
4 cups grated carrots
1 cup raisins
1 cup shredded coconut
2 apples, peeled and grated
3/4 cup chopped walnuts (optional)
2 cups vegetable oil
4 teaspoons vanilla extract
I really like the sound of these muffins but do not want 2 1/2 cups of sugar. Is there a substitute, maybe molasses, maple syrup?
Recently diagnosed diabetic, I have been experimenting with using Stevia in the Raw instead of sugar! There is also a brown sugar substitute in that isle. Good luck!
I too would like to know if you could substitute out the wheat flour with another flour, say almond?
Could this recipe be made in a loaf tin (or 3) or a couple of 8 x 8's rather than in muffin tins?
I also add a whole orange - peel and all. Chop in food processor along with nuts, carrots, apples, coconut, cranberries.
