Try this scrumptious apple cake, which won second prize in the 2016 Apple Recipe Contest from our 2017 Garden Guide. Congratulations to Dorothy Rieke of Julian, Nebraska!

2 cups sugar
1 cup vegetable oil
1 teaspoon orange extract
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
3 cups peeled, cored, and shredded Granny Smith apples
1 cup chopped black or English walnuts
1 cup butterscotch chips

Preheat oven to 350°F. Grease a 13x9-inch baking pan.

In a bowl, mix together sugar, oil, extract, and eggs.

In another bowl, sift together flour, baking soda, baking powder, salt, and cinnamon.

Add dry ingredients to egg mixture. Stir well. Stir in apples. Add walnuts. Mix thoroughly.

Pour batter into prepared pan. Sprinkle butterscotch chips on top. Bake for 1 hour, or until a tester inserted into the center comes out clean.
