Similar in texture to a sweet potato casserole, this Maple Squash Casserole uses the best of your winter squash harvest! We used a combination of delicata and butternut squash to create this slightly sweet and nutty dish.
Preheat oven to 350 degrees F. Combine all ingredients except pecans and beat well. Spoon into a buttered 1-quart casserole. Place immediately into the oven and bake about 35 minutes, until top is golden. Top with warm maple syrup and pecans.
