Pineapple-Ginger Topping

Recipe for Pineapple-Ginger Topping

2 tablespoons butter
1/4 cup maple syrup
2-1/2 cups fresh pineapple, chopped medium
2 teaspoons freshly grated ginger
1/4 teaspoon ground cinnamon


Melt butter in a cast-iron skillet over medium heat. Add maple syrup and pineapple. Stir, then add ginger and cinnamon. Heat until bubbling, then reduce heat and simmer for 10 minutes.
