Apple Zucchini Slaw

This Apple Zucchini Slaw was a winning recipe in our Garden Guide Recipe Contest!  Winner: Barbara Dentoni, Felton, California.

1/3 cup mayonnaise
3 tablespoons cider vinegar
1 tablespoon sugar
1 teaspoon caraway seeds


In a small bowl, mix all of the ingredients. Stir until well blended



4 cups coarsely shredded zucchini
1/4 cup thinly sliced green onions
2 medium Granny Smith apples
1 medium Fuji apple
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper


Place the zucchini and green onions in a large bowl. Core the apples and cut into ½-inch chunks. Stir the apples into the zucchini mixture.

Pour the dressing over the top of the zucchini mixture and toss lightly until well coated. Sprinkle with salt and pepper and mix again. Cover and chill for 3 hours to allow flavors to mingle.

To serve, use a slotted spoon to transfer the slaw into a serving bowl and discard any liquid left behind.


Makes 6 servings.
