if 'squares' of bittersweet chocolate aren't available, what would the equivalent be in miniature bittersweet chocolate chips (which are available) ??
PS, bittersweet and semisweet are not the same thing. I am an avid baker and visit all the specialty stores, along with regular grocery stores. I have never seen bittersweet chips. At what store do you purchase them?
Ghirardelli's 60% cacao chips are considered bittersweet.
Equal Exchange makes a 70 percent bittersweet chocolate chip. There are other brands as well although you may have to order them online if not available in your local market places. If unable to find chips locally however attempt to look first for discs which tend be more readily available than bittersweet chips in many store isles.
Squares are normally 1 ounce, so just use one ounce of chips.
