Chocolate Oatmeal Bars
An easy, chewy, oatmeal bar with chocolate! So simple, so delicious.

Ingredients
2 squares semisweet chocolate
1/3 cup butter
1/4 cup light corn syrup
2/3 cup sugar
1/2 teaspoon salt
1-1/2 teaspoons vanilla extract
2 cups oats
1/4 cup chopped nuts
Instructions
Preheat oven to 425 degrees F. Coat an 8x8-inch baking dish with nonstick cooking spray.
In a double boiler, melt together the first four ingredients. Add salt and vanilla, and then stir in oats and nuts. Press into prepared pan and bake for 12 minutes. When cool, cut into bars.
Yield:
Makes 16 bars.

substitution
if 'squares' of bittersweet chocolate aren't available, what would the equivalent be in miniature bittersweet chocolate chips (which are available) ??

3 tablespoons dry, unsweetened cocoa powder plus 1 tablespoon oil or melted Crisco = 1 square unsweetened (or bittersweet) chocolate.

Squares are normally 1 ounce, so just use one ounce of chips.

PS, bittersweet and semisweet are not the same thing. I am an avid baker and visit all the specialty stores, along with regular grocery stores. I have never seen bittersweet chips. At what store do you purchase them?

Choc. Oatmeal Bars
I constantly pack goodies to send to deployed soldiers around the world. Would you recommend wrapping each square in plastic, freezing them & then using my foodsaver to help these keep longer? I have a similar recipe...but when I made these I knew I had to bake the love forward for our Troops! Thank You!

We think packing the bars individually using your foodsaver and then putting them in a container with a lid will do the trick. Thank you for what you do for our soldiers.
Perfect amount of chocolaty goodness!
I expected to bite into dry wholegrain oats barely masquerading as a treat (AKA what my mother-in-law puts together). Instead I was delighted. It was sweet but not too sweet. Well balanced taste, plus great chewy texture. Satisfied my sweet tooth.
