Ham With Brown Sugar Glaze

1 uncooked, bone-in ham (7 to 9 pounds)
1/3 cup brown sugar
1 to 2 tablespoons orange juice
1/2 teaspoon ground mustard


Scrub the ham and soak it for several hours or overnight in water to cover. Drain, cover with water, and simmer on the stove for 15 minutes per pound or until an instant-read thermometer reads 160 degrees F.

Remove from the water bath, drain, and let cool. Trim off fat. Score the meat.

Preheat oven to 350 degrees F. Place ham in a baking dish.

In a small bowl, mix together brown sugar, orange juice, and mustard. Spread glaze on the surface of the ham. Bake for 20 to 30 minutes.


Makes 14 to 18 servings.
