I have a recipe that call for 2 lb. off copped peppers how any cup would that be

Yukon Gold Potatoes

I am using a recipe that calls for 12 ounces of Yukon Gold Potatoes. I don't have a scale & have 10 small Yukons on hand (bought individually, not in a weighed bag).
I know they vary in size but just thinking of an average-sized small potato, yellow, red, or gold, approximately how many would equal 12 ounces?

Hi, Gina. This is a tough one. As you know, potatoes vary in size. An average size (think medium) Yukon Gold potato is about 5 ounces. So if you have smaller ones, 4 would be close to 12 ounces. It might be worth asking around, friend/neighbor, to borrow a food scale to be certain.

I was wondering how many cups are in 1 pound of sliced green pepper?

Thanks for sharing. I've always just measured 1 lb for 2 cups!

Petite Yukon Gold Potatoes

Hi I have 2 , 24 ounce bogs of Petite Yukon Gold Potatoes , i need 2.5 pounds for a soup recipe for a crock pot cut in 2 inch chunks , How many potatoes or cups would that be..?

The Editors's picture

Twenty-four ounces is 1.5 pounds, so you’ve got 3 pounds of potatoes total. If you need 2.5 pounds for the recipe, you’ll need to use one whole bag plus two-thirds of the other.

I just wanted to know how

I just wanted to know how many potatoes I would need for 5/8 of a pound?

So my original crockpot broke and I had to buy a new 1 but it's smaller, so I had to cut the original recipe in half. And it originally called for 1 1/4 lbs of baking potatoes, thinly sliced. And half of 1 1/4 lbs is 5/8 of a lb. So is 5/8 a lb. a full 1 potato or is it less than 1 potato?

fractions of a pound

The Editors's picture

Think of it this way: There are 16 ounces in a pound. One eighth of a pound is (16 divided by 8), so the answer is 2. Five eighths means 5 times 2, so the proper weight is 10 ounces.

As for how many potatoes that is, you need to weigh a potato and see how close it comes to 10 ounces and use all of part of it—or, if one potato is less than 10 ounces, use part of another. In all likelihood, the recipe will come out fine if your potato portion is slightly over or slightly under 10 ounces.

Bell peppers vary in size,

Bell peppers vary in size, but a general rule is that 2 bell peppers equal 1 pound. So 10 bell peppers would be about 5 pounds.
